Carrot and pumpkin (or Squash)

Ingredients


You can use squash instead of pumpkin.


1 large onion

3 large carrots

piece of pumpkin

¼ teaspoon dried thyme

Pinch nutmeg

1 ½ pints chicken Bovril stock


Method


Dice the onion and put it in a large non-stick pan over the lowest heat. Put the lid on and sweat the onions whilst preparing the rest of the vegetables.

 

Peel and chop the carrot and pumpkin and add to the softened onion with the thyme and nutmeg.

 

Sweat for a further five minutes.

 

Add the chicken Bovril stock.


Bring to the boil and simmer until the vegetables are soft.


Allow to cool slightly and then liquidise and serve.
