Ingredients (serves 4)
454g lean beef (cubed)
Fry Light for spraying
142g dried apricots
2 tablespoons red wine vinegar
1 level tablespoon brown sugar
½ teaspoon mixed spice
½ teaspoon ground cinnamon
¾ pint stock made with beef Bovril
15 whole shallots
Serve with baby boiled potatoes and fresh vegetables
Method
Preheat the oven to 180C/350F/Gas mark 4
Spray a large saucepan with Fry Light and brown the beef in it. Remove the beef with a slotted spoon and put in an ovenproof casserole dish.
Cut the apricots in small pieces and add to the beef.
Put the vinegar, sugar and spices in saucepan and cook until a syrup forms. Then add the stock and bring to the boil.
Remove from the heat and pour over the beef and apricots, cover the casserole and cook in the preheated oven for 1 hour.
Remove from the oven and stir in the shallots. Cover and return to the oven for another hour or until the beef is cooked and tender.
Remove from the oven and stir well before serving.
