Fruit Tea Bread

Sometimes I just feel like something sweet and fruity so I keep small slices of this cake in my freezer for such occasions.


Ingredients (serves 4-6)


255g mixed dried fruit

7 fluid ounces black tea

1 level tablespoon treacle

1egg

283g self-raising flour

14g Splenda

1 teaspoon mixed spice


Method


Put the dried fruit in a large bowl and pour over the tea and the treacle. Cover and leave to soak overnight.


Preheat the oven to 160C/325F/Gas mark 3


Line a 13 x22 cm loaf tin.


Lightly beat the egg and stir into the fruit mixture. Sift the flour and add to the mixture with the Splenda and mixed spice and stir until it is well combined.


Spoon into the loaf tin and bake in the oven for 1 hour or until a skewer inserted in the middle comes out clean.


Take out of the tin and cool on a wire rack. When cold cut into thin slices and serve.
