Savory Cod and Potatoe Bake

Ingredients (serves 4)


1 lb new potatoes

2 teaspoons

4 cloves of garlic crushed

24 cherry tomatoes

4 sprigs of rosemary

Salt and freshly ground pepper

Fry Light

4x6oz thick boneless cod fillets

4 tablespoons white wine


Method


Preheat the oven to 220 C /425 F /Gas 7


Cut the new potatoes into chunks but leave the skin on.


Cook until almost tender either in a pan of boiling water or in the microwave.


[To soften my new potatoes I put them on a paper towel in a microwavable dish. I cover them with another paper towel and then cook them on high for 4 or 5 minutes]


Spray a large roasting tin with Fry Light and tip the potatoes into it.


Scatter over them the crushed garlic, the tomatoes, the rosemary and salt and pepper.


Spray with Fry Light and bake for 15 minutes.


Place the cod fillets on top of the potatoes and spray with Fry Light.


Splash in the wine and then cook for a further 5 minutes until the fish is just cooked.
