Salmon Pate

This can be served on toast for a light meal.


Served in a ramekin dishes and decorated with a slices of cucumber it makes 4 interesting starters.


Serve as a dip with vegetable croutons at a party.



Ingredients


1 large tin red salmon

125g quark

Rind of ½ a lemon

1 ½ tablespoons lemon juice

Salt and pepper to taste

Cucumber to decorate


Method


Drain the salmon and remove any skin and bones.


Mash together, or blend in a blender, the salmon, quark, lemon rind, lemon juice and condiments.


Leave in the refrigerator to cool for at least an hour before serving.
