Vanilla Fruit Brulee


Ingredients (serves 4)


500g frozen fruit mix

A few drops of vanilla essence

2 x 150g pots Total Greek 0% yoghurt

4 tablespoons Demerara sugar



Method


Put the frozen fruit mix in a saucepan over a low heat, cover and gently cook for about 7 to 8 minutes or until thawed and hot. Remove from the heat and add the vanilla essence.


Put the fruit in four heatproof ramekins or dishes and spoon over the yoghurt so that it covers the fruit.


Put the grill on a high setting. Put the dishes on a grill tray and sprinkle each with 1 tablespoon Demerara sugar. Grill for about 2 minutes, until the sugar has melted and caramelised.


Serve immediately.
